"Pel'Oro" represents Catarratto in all its tradition.

 

This variety was historically chosen for its high yield, but thanks to the skilled hands of some Sicilian producers, like Mimmo Paone, it has become a grape of great quality, which now grows practically only in Sicily.

 

The vineyards, located 300 meters above sea level, have a mixed soil composition that perfectly drains the necessary water for vine nourishment.

 

Vinification is preceded by a short cold maceration, and fermentation takes place exclusively in stainless steel.

 

The aging process also takes place in stainless steel for a duration of 5 months.

 

Mimmo Paone, with his Catarratto "Pel'Oro," gives us a small slice of his land with all its Mediterranean and maritime characteristics.

Tasting comment

The Peloro Bianco is a young wine that appears perfectly clear and has a pale straw yellow color.

 

On the nose, it presents itself clearly with evident floral notes of white fruit, but above all, the notes of aromatic herbs such as thyme and rosemary are highlighted.

A well-present mineral note!

 

On the palate, it is clear, clean, with an intense flavor, fresh, and a lingering taste of fruity, floral, and herbal notes.

 

It pairs well with fish dishes, especially steamed, battered fried dishes, and pasta with vegetables.
