The Malvasia Delle Lipari Doc passito is one of the 3 wines with Controlled Designation of Origin in the province of Messina.

 

The process to obtain the Malvasia dessert wine involves late harvesting during the super-ripening period and subsequent drying of the grapes on special racks under the scorching sun of the island of Salina.

 

Once the sugars inside the berries have concentrated through evapotranspiration of water, they are pressed.

The subsequent fermentation process, carried out by yeasts, is not completed due to a high percentage of sugars.

 

This means that the resulting alcohol is produced through natural fermentation, while the residual, undecomposed sugar is a result of the previous drying process.

 

The grapes used are: 95% Malvasia di Lipari and 5% Corinto Nero.

 

Available sizes: 75 cl - 50 cl - 37.5 cl.

Tasting comment

Visually, it has a light golden yellow color.

 

The aroma is frank, with citrusy notes of broom, apricot, and citrus honey.

 

On the palate, it is very fresh, savory, and spicy, with an excellent balance between sweetness and alcohol.

 

The aftertaste reveals aromatic wild herbs.

 

It pairs well with dry pastries, almond-based pastries, piparelli (spicy cookies), sesame cookies, cantucci (Italian almond biscuits), as well as semi-aged cheeses.
